Thyme Thymus vulgaris
Thyme is an herb native to the Mediterranean whose name originates from the Greek word ‘thymos’, meaning ‘strength’, reflecting that this small plant packs a punch. Thyme is part of the mint family and can grow under extreme conditions and in poorer soils, it is also able to survive heavy grazing. This plant is loved by bees because of its sweetly scented and nectar-filled flowers.
A classic for the winter, Thyme is in Elderberry Syrup.
